Joel's Carob Mousse Pie
Nutritious, amazingly tasty and quick! Thanks Joel!
Crust
- 2 c shredded coconut
- 11/2 c pitted dates
Place in food processor unit mixture holds together. Place filling in a pie pan and press it against the bottom of the pan to form a firm crust.
Filling
- 2 avocados
- 1 c carob
- 1/2 cup agave nectar
- pinch of salt
- 1/2t cinnamon
- 1/4 cup coconut
Place all ingredients into a food processor. Process until smooth. Place the filling in the crust. Refrigerate for three hours and enjoy.

I have had this and it is fantastic. It has been enjoyed by those following a
raw food diet, as well as friends who follow an American standard cooked diet. So it makes it a good dessert to bring to a gathering, and it really is quick to make.

Has anyone tried this with raw cacao powder? I think I am going to just give it a try and see how I go! :)

When u say 1 cup of carob, is that carob chips or powder? Also what is agave nectar and where can I find it?

Carob powder.
Agave is a cactus plant nectar. You can get it here:

When they say 1/4 cup coconut is that young coconut meat or is that dried coconut?

It is actually young coconut meat.
Dried shredded coconut is for the crust.
