Introducing Angelena Bosco

Am I delighted to be featuring a very dear friend of mine today, Angelena Bosco. Several years ago when I was just getting into raw foods, Angelena was my first teacher! We have since become close friends and I just admire her so much for what she brings to the community, who she is as a woman and for the dear friend she is. She lives on a huge orange and avocado orchard and since moving to Utah I really miss her deliveries of oranges! So if you are in the So Cal area and want the best oranges around, give her a call!

What inspired you to create Simply Raw Inspiration?
I grew up knowing about vegetarian foods and juicing because my father, a chiropractor, learned when he was a young man about eating for health.  in 2003 he wrote an article for Vibrance Magazine and shared it with me.  The magazine was all about the raw food diet, something I had never heard of.  As I read it cover to cover I knew that this was the proper way for humans to eat.  It just made perfect sense. 
However, it took me 2 years of reading and studying it before I took the plunge and tried it for myself.  After 11 days of eating raw foods (mainly juicing) I felt the best I had ever felt in my 36 years!  I couldn't keep it to myself.  I told my neighbors and friends to come and hear what I had learned and to try some raw food I prepared for them and that was the beginning. 
Since then I have had the opportunity to teach many others the benefit and ease of preparing raw foods.  I have also written a few booklets about health and happy living, Fall In Love With Feeling Good, How to Build a Raised Bed Garden, & 10 Simple Vegetarian Recipes and I have more on the way.

Can you tell us a bit about yourself?
I am a new mom to Samuel who just turned 1.  He is such a bright light in our lives.  Feeding Samuel good foods is so important to me and Bill. Bill and I knew we would be making his food from day one. He enjoys raw fruits and steamed vegetables as well as green smoothies and green juices.  He growls after he takes a bite and that let's me know he loves it! He is precious.  
I will be teaching baby food classes beginning April this year.  It is super quick and simple to prepare wholesome foods for the baby.    
What's the best way for a raw newbie to get into raw or vegan foods?
Begin by adding fresh raw foods to your current diet.  Get a few recipe books and learn as much as you want to about eating raw.  Most importantly  take it slow and enjoy it.  
Can you share with us a favorite recipe or dish?
I love sunflower seed pate.  It is simple, hearty and filling. 

  • 1 cup soaked sunflower seed
  • 1 Tbsp. tahini
  • 2 Tbsp. parsley
  • 1 Tbsp. red onion
  • 1 small clove garlic
  • 1/8 cup lemon juice
  • 1/2 tsp. salt
1 Blend together in a food processor.  Use the pate to fill bell pepper slices, celery stalks, or top cucumber slices. 
How is your spiritual life in conjunction with the raw foods lifestyle? How does it all relate for you?
I was not a spiritual person.  I know I am not the only one that has had a shift in this area of my life after changing my diet to raw foods.  As I mentioned earlier, it was only 11 days of eating so clean that I really felt my best.  And I felt more connected to the earth on a such a different level.   When I chose to eat raw I had no idea it would affect my life on so many levels.  I thought I would feel better physically and hopefully I'd lose weight but to change my attitude, self confidence,  & how I viewed life was like night to day! 
How do you come up with recipes?
Honestly, I am not that good at coming up with raw recipes.  I have created a few out of necessity.  Cooked vegetarian meals are easy for me to create and Bill is very good at putting foods together on a whim and having them come out pretty tasty.  We are a good team in the kitchen. 
My favorite recipe creation is my zucchini walnut cookies.  Perfectly crisp from the dehydrator just like I like them.

What's one thing that most people don't know about you? 
I failed PE in school and was always in parent conferences because I hated exercise and was so self conscience. 
I would love to be able to see those teachers now and let them know that all their hard work and frustration was not for nothing.  :)  I am now studying to be a certified personal fitness trainer.  I hope to have that finished by August and offer a complete program of nutrition and fitness.  Certainly something I have struggled with since I was a young person.  
Do you think it's vital to be 100% raw or 100% vegan? 
I think 100% fresh is vital.  Boxed and processed foods are bad news. 
IF you were to eat any cooked food you wanted what would you eat?
I love Chinese food. 

What is your typical day like and what would you eat?
My day is full like most people - I do however get to sleep in to 8.  We make a smoothie or juice.  If I am going to workout I will have oatmeal or a fruit salad with some tahini sauce (Tahini, almond butter, orange juice), We'll go outside  for an hour or so then come back and make lunch, usually a salad.  Then dinner may be a salad, steamed vegetables, or vegetable soup, with some quinoa on the side either sprouted or steamed.   Sam has blended fruit in the afternoon and I blend up vegetables that I've made for dinner for him.   He is still nursing in between.

What made you go raw or go vegan?
I wanted to feel better.  I knew I had to change to a clean diet in order to feel good.  I had been sick with a cold for over three weeks. I also wanted to lose weight, which I did.  I lost 35 lbs in about 3 months eating raw and jogging.  I ran my first 5 k after training for only a short time.  I had boundless energy.  
What are some raw food staples in your current diet?
Apples and almonds.  I have them always available to snack on.  
Are you 100% raw?
No.  I do go on 6 week stints and I just finished a 10 day juice fast (which I led online) that was fun and renewing.

Not everyone can be a great chef or spend the time preparing food, what suggestions would you give for the simple person?
Raw foods in their truest sense are the simplest to prepare.  And to make it easy the best advice I can give is to plan your meals.  Find recipes that you like to make or want to make, plan ahead, shop and make time to prepare your meals.  Raw or not we need to get back in the kitchen and planning is going to be number 1. 

What is the last book you read?
Well... The last 2 movies I watched were Fat, Sick and Nearly Dead and Forks Over Knives.  Two very inspiring flicks.  
If you could be a superhero, what would you want your superpowers to be?
I would want to be able to care and cook for people so that they could eat well.  Many people don't have time to prepare healthy meals for themselves and their families and I would like to help them make it fresh. 
If aliens came by, (ya know the aliens that have "never" been to Earth before), what would you feed them first? 
Green juice - Apples, spinach, ginger, celery, and cucumber.  My new fave.
