A Plethora of Raw Soup Recipes!

It’s a chilly, rainy morning here in Oregon today. I’m longing for my Vitamix to make some warm raw veggie soup! I love raw soups! They are truly the comfort food of the raw world for me! I will have to settle for sending out recipes to all of you! 

Even on a cleanse you can still make raw soups with just a few modifications. If your recipe calls for cashews or other nuts or nut milk you would leave out the nuts and swap the nut milk for water or coconut water. 

Here are a few recipes I created with any modifications for cleansing listed. Sometimes if I am doing a cleanse and get into that challenging time where you feel hungry, making some warm raw soup will take me right out of that space!

Creamy Spinach Soup

I love spinach! This is an easy and simply yummy soup that satisfies me completely! 

Ingredients:

  • 1 1/2 water
  • 2 cups spinach
  • 1/2 avocado
  • 1 stalk celery
  • 1 tsp cumin
  • 1 tsp red pepper
  • 2 cloves garlic
  • pinch salt

Blend all ingredients in a Vitamix until warm. If desired, add some chopped spinach, mushrooms or red peppers to garnish.  Enjoy!

Tomato Basil Soup 

Thick warm tomato soup just say COMFORT food to me!  This is a thick, rich soup that will make you feel warm, nourished and cozy.

Ingredients:

  • 2 cups water
  • 2 cup roma tomato, chopped
  • 1/2 cup sun dried tomatoes, soaked in water
  • 1 cup celery, chopped
  • ¼  cup red pepper, chopped
  • ¼  cup basil, chopped
  • ¼  avocado
  • 3 dates, soaked
  • 1/8  tsp cayenne 

Directions:

Blend for several minutes until warm. Enjoy!

Creamy Mushroom Soup

This recipe is from my Avocado Smoothie book and is definitely one of my favorites!

Ingredients:

  • 2-3 cups water
  • 2 cups mushrooms; variety of crimini, portobello and shitake or chose one
  • Trim stems of mushrooms, chop and set aside. Will be used as garnish. 
  • 1/3 cup yellow onion, chopped
  • 2 cloves garlic
  • ½ cup cashews, soaked (If you are on a cleanse leave out)
  • ¼ - ½ cup avocado
  • 1 ½ cup marjoram or thyme 
  • 1/2 tsp sea salt
  • 1/4 cup leek, opt
  • Optional garnish: hot chili oil 

Directions:

Blend In a high-speed blender for best results. Let the soup get warm. Pour into serving bowl and add chopped mushroom stems, chopped parsley and a dash of pepper.

Garden Veggie Soup

Delicious veggie soup that is nourishing, light and satisfying!

Ingredients:

  • 2-3 cups water
  • 1 cup broccoli florets, chopped
  • 1/2 cup carrots, chopped
  • 1/4 cup celery, chopped
  • 1/2 cup tomato
  • 1 clove garlic
  • 3 tbls parsley
  • 1/2 tsp sea salt
  • 1/4 cup soaked cashews (Leave out of you are cleansing)
  • 1/4 avocado

 

Blend in high-speed blender for best results. Blend until soup is nice and warm. Pour in a serving bowl and enjoy!
